One Bowl Chocolate Zucchini Muffins

Sometimes you just need some chocolate! These muffins are a healthier way to satiate that craving. Made with no refined sugar (except a few chocolate chips on top) and the goodness of whole grains, these are a huge hit with the kids. I like to make mini muffins so I can eat 2 or 3 at a time!

Not your grandma's spinach dip: Welcome

Recipe

Makes 12 full size or 24 mini muffins

Prep Time: 10 minutes

Cook Time 18-22 minutes

Ingredients:

1 1/3 cup whole wheat pastry flour

1/3 cup cocoa powder

1/3 cup rolled oats

1 tsp baking powder

1 tsp baking soda

1 tbsp flaxseed

3 tbsp water

½ cup maple syrup

½ cup almond milk

¼ cup melted coconut oil

1 tsp vanilla

1 tsp apple cider vinegar

2 small zucchini grated (about 1 ½ cups)

Mini chocolate chips for topping (I like Enjoy Life)

Method:


Preheat oven to 375 degrees F

Combine dry ingredients in a large bowl and mix together. Add all the remaining ingredients except zucchini and chocolate chips. Mix thoroughly, then fold in grated zucchini. Pour batter into muffin tins and sprinkle each one with a few chocolate chips if desired.

Bake for 18 minutes for mini muffins and 25 minutes for full size.

Let cool and enjoy!
