Not Your Grandma's Spinach Dip

I consider myself to be one of the luckiest people on earth to be best friends with someone I've known since we were tweens! Sara's dear grandmother made a spinach dip that was legendary! When we went vegan, I made it my mission to create a vegan version. This is another most requested dish and its great for birthday parties and potlucks. I recommend assorted veggies as well as chips, pretzels, and bread for dipping.


I have also been knows to use the leftovers to make a grilled cheese sandwich!

One Bowl chocolate zucchini muffins: Welcome

Recipe

Serves about 10

Prep Time: 10 Minutes

Ingredients:

1 cup vegan mayo (I prefer Follow your Heart Vegenaise)

1 cup vegan sour cream (I use Tofutti brand)

1 pound frozen chopped spinach, thawed

2 packages french onion dip mix (I recommend Spice Hunter Organic dip mix)

Method:

Squeeze any liquid out of the frozen chopped spinach so it is very dry.  Combine all ingredients together in a large bowl and mix until well incorporated. Refrigerate until serving.
