Pumpkin Maple Butter Muffins
Baking is definitely one of my go-to activities for stress relief! And nothing bakes better than a muffin. These pumpkin muffins are moist and fluffy with just the right amount of sweetness. Maple butter makes an easy all natural glaze on top. I sometimes add some white chocolate chips to give them more of a dessert flavor.

Ingredients
1 can pumpkin
1/4 cup coconut or vegetable oil
1/2 cup sugar
1/2 cup almond milk
1 tsp apple cider vinegar
1 tsp vanilla
2 cups whole wheat pastry (or other) flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp pumpkin pie spice
Maple butter for topping
Method:
Preheat oven to 375.
Combine wet ingredients and dry ingredients in separate bowls then mix to just combine.
Put approximately 1/3 cup of batter into lined muffin tin and bake for 18 minutes. While still warm, spoon maple butter on top and let it melt a bit down the sides. Serve warm for best results.
