Zucchini Walnut Muffins

The kids devoured these muffins!  I actually prefer a little oil in my baked goods, and would probably add three tablespoons of a neutral oil next time.  They are still delicious as is however.  They come together very quickly with just a few ingredients and only fruit and maple syrup for sweetener.

 

Recipe

Makes 12 large muffins
Ingredients:
1 ½ cups whole wheat pastry flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 medium zucchini, grated
2/3 cup applesauce
½ cup maple syrup
1 tsp vanilla
½ cup chopped walnuts
Method:
Preheat oven to 375 degrees F.  Combine dry ingredients in one bowl and wet in another.  Add dry to wet and stir to combine.  Fold in walnuts.  Scoop into lined muffin tin and bake for 18-20 minutes.
