Blueberry Banana Oat Pancakes
We have pancakes every weekend in our house. The kids love them, and even though they are a weekend treat, I try to amp up the nutrition as much as possible. My newest version is whole grain, oil-free, and has no added sugar. The kids have no idea how healthy they are because they are also exceptionally delicious!

Recipe
Makes 10 medium sized pancakes
Prep time: 10 minutes
Cook time: 15 minutes
Ingredients:
4 tbsp ground flaxseed
¼ cup water
1 ½ cups whole wheat pastry flour
½ cup quick oats
1 tbsp Baking Powder
2 cups almond milk
1 ripe banana, mashed
½ tbsp vanilla extract
2 cups blueberries
Method:
Combine flaxseed and water in a small bowl and let sit.
In one bowl, combine flour, oats, and baking powder.
In another bowl, combine almond milk banana, vanilla, and the flaxseed mixture.
Mix to combine and let sit for a few minutes.
Heat a skillet or griddle. Lightly grease with a bit of Earth Balance or coconut oil.
Using a ¼ cup measuring spoon, pour pancake batter circles onto the griddle. Sprinkle with blueberries and let cook until bubbles appear. Flip and cook for another 3-5 minutes. Continue with remaining batter.
